Man oh man...it's time to break out my raclette grill. Loved this pick, thanks to @GourmetLibrary via Twitter for the suggestion. Did indeed have to order a full pound of the stuff. Despite being a raw cow's cheese, something about its earthy stank almost fakes me out to take it for a goat cheese. Not sure if my wife would enjoy it, but she certainly has to try this! The development of the flavor over your palate is wonderful, and paired with foods? Over a hot raclette grill? Toss in some paprika? You've got yourself an awesome meal to share with friends. Order up a few pounds, invite over some friends & let the melting begin! -

This cheese came highly recommended by @GourmetLibrary via Twitter, so a big thanks to them first off...they were absolutely correct! This cheese is indeed dense, packed with flavor, but has a creamy texture. If it was to be grated it would make like a parmesan, similar to the notes comparing it to a young Parmigiano Reggiano. A hint of sweetness. Much love to this cheese. -

This cheese came recommended by the Gourmet Library staff on-site & BLEW MY FACE OFF. I was intrigued by the color at first & immediately taken by the intense flavor & extremely firm density. This cheese is slow to eat & a pound will last you quite a while. The rind is quite a showpiece & the color makes for great table presentation. Wonderful with a truffle honey. Gourmet Library, will you be getting this back in stock soon?? -

Creamy & delicious, quite possibly more preferred by my palate than a Gouda. I'm not a #1 fan of Swiss/Alpine cheeses, but as noted in the description the stylistic blend of this cheese makes it a delightful hybrid. -

One of my favorites! Great to snack on by its lonesome, but try melting some crumbles in a pan grilled ham sandwich or over the top of a juicy burger as well! -
