Had this a couple of weeks ago and just now saw it on here. I couldn't believe how much this tasted like heavy cream. Heavy cream that's solidified with just a touch of acid (minus the curdling) is exactly what this cheese tastes like. Justin said it best when he mentioned that it would be a great beginner cheese. Tasty, tasty stuff. -

This is such a great video review. We did a huge olive oil tasting to figure out what we wanted in our assortment (nationwide culinary retail store), and this was in my top 4 out of the hundred or so. This was up against oils that were 3-4 times as expensive. His tasting notes were almost identical to what I got out of this oil. That flavor he was trying to get, I remember thinking it was very similar to one of those little stringy veins on a peeled banana. Not too bitter, but definitely present. -

Wow! This stuff is so, so good. On its own, the blue flavor comes through very strong, but that intense creaminess brings everything back into balance. Better yet, it turned a very mediocre port (2003 Fonseca LBV) into something absolutely delicious. -

I really wanted to like this cheese more. It's not bad by any stretch, but I found it to be a little one dimensional. There were pleasant caramel/nutty flavors that came through HEAVILY, but that was about it. Nice cheese and for the price, a pretty good buy, just not my favorite. -

His reaction in this videa is perfect when he takes that first bite. This cheese is a palate time bomb. Starts off nice and mellow and then just goes crazy and takes over every inch of your mouth. Such a great cheese. Just used this for French onion soup topping and ended up having a few extra slices on this side. -
