    Just received this cheese and it is stupendous. The grass, soy sauce flavors that another person has stated and gasoline taste is awesome.

    This is probably the craziest roller coaster ride of flavors in one cheese that I've ever tasted. It really does have a grassiness to it, as well as a very umami/soy sauce flavor as well. This is ridiculously good cheese and makes me miss Wisconsin!
