Green Hill is aged 3 to 6 weeks and is a soft ripened double cream with a bloomy rind. The pate is thick, creamy, tasting smooth, and buttery, with a slight acidic finish. Great with a Tawny or Ruby Port, but Champagne would fit perfectly! This cheese won third place in the soft ripened cheese made with cow's milk category at the 2010 American Cheese Society Competition.
