Produced by King Island Dairy, just south of Melbourne Australia, this blue cheese is very unique. Due to the thick wax covering, the cheese is able to retain enough oxygen and moisture creating a sweet and nutty flavor with a rich mouth feel. This amazing blue has a smooth an creamy texture. It is named after the infamous Roaring Forties gales, which frequently bring westerly winds of more than 100 km per hour to the island that lies 40 degrees latitude. Full wheel form is about 3.2 lbs.

This cheese came highly recommended from a friend over at Cinderella Wine, and they were not joking. This is a cheese where you can buy a little, use a little, accentuate other flavors, foods, cheeses, dips, it's a delicious, unobtrusive blue but intense and lovely and with real personality. Love it! -

Wow! This stuff is so, so good. On its own, the blue flavor comes through very strong, but that intense creaminess brings everything back into balance. Better yet, it turned a very mediocre port (2003 Fonseca LBV) into something absolutely delicious.
