Due to the thick wax covering, the cheese is able to retain enough oxygen and moisture creating a sweet and nutty flavor with a rich mouth feel. This amazing blue has a smooth an creamy texture. It is named after the infamous Roaring Forties gales, which frequently bring westerly winds of more than 100 km per hour to the island that lies 40 degrees latitude.
