    I always had bought my parm pre-grated from the grocery and then I watched Justin's review of this Parmigiano Reggiano and just grated some on to some of my most favorite Novello half-and-half pasta that had been drizzled with Il Casolare Extra Virgin Olive Oil both of which I purchased from Gourmet Library. I can't think of a more delicious bowl of pasta. The cheese is so full of fruity and nutty taste that it made an already world-class pasta maybe a world-best pasta. If you are using the parmigiano you buy pre grated at the grocery, please stop. It's junk. Get the good stuff because it will make all the difference in the world to your eating experience. I absolutely love this cheese and am going to have to buy more soon because I only bought 1 pound. Thank you Gourmet Library for offering this totally incredible cheese. It's rad, awesome and totally delectable!!!!

    You simply cannot go wrong with this one. I may be off in my flavor description but for me this is what it reminds me of. It almost has a cheddar meets parmesan flavor profile. The texture is dry but silky / creamy. As described above, it is crumbly like parmesan and very dense. Put this in a salad or just cut and eat. It goes well with a variety of wines. Right know I’m enjoying this with a Riesling and it’s working out just fine.

    This is a good cheese, very nutty and salty. I have had better Manchengos (beacuse I was in Spain last month,) but have also had much worse.

    When I first had this cheese I wasn't impressed. I was tasting it along with some other cheeses but when I came back to it it became my favorite of the 6 or so that I tasted. Starts nice and buttery with excellent crystallization. Gives it great texture. Builds the taste in your mouth. Also get the caramel that other reviewers mentioned. A very sweet cheese. Very good.

    Justin nailed the flavor profile in this review. Absolutely a very unique cheese with tons of depth. As described in the video this buttery caramel nutty profile explodes on your pallet. It does have a slight sweet flavor but not in an awkward way more so in a rich flavorful way. This one is phenomenal on it’s own but easily would pair well with many styles of crackers and breads. Buy it in bulk.

    I received my raw rhododendron honey late this afternoon, just as I was trying to figure out what to make for dinner. Should I make chicken, burgers, steak, salmon? I was having trouble figuring it out so I stopped for a moment and opened my honey to give it a little taste. Very delicious, I thought, and so fragrant, perhaps perfect for a glaze... So I took the chicken out of the fridge and prepared a nice glaze of Rhododendron honey, soy, garlic, imported french dijon mustard, some L'Estornell Reserva Sherry Wine Vinegar (from Gourmet Library...mmmmmm....) and just a touch of corn starch and spread it liberally all over the the nice fat bird.     Wow, absolutely delicious. Only got this due to the WLTV free shipping and just tried a little bit tonight and loved it. Directions say to get the cheese to room tempature but I ate right out of the fridge with the rind. Nice nutty and earthy flavored to this wine. For the price i absolutely recommend it.

    Don't ask me why, but I am a little intimidated of cheese. I'm not certain if it's because of the variety of textures, colors, smells, prices, or what, but I've always been just a scared of them. So, having gotten heavily into wines over the past decade and at the same time having become a gourmet food junkie, I thought I'd try to overcome my fear of cheese. So I sent an email to Justin and asked him for some recommendations to go with some delicious Gewürztraminer I bought from Gary Vee at Wine Library. Justin suggested this Monteo Tavoliere and i can't say I know exactly what I am tasting for, but this cheese is DEEElicious. It's very creamy, not overly sharp and exceptionally tasty. It pairs incredibly well with the wine and my only gripe is that it goes fast because I can't stop eating it. Many, many thanks to Justin for this superb recommendation.     Wow, this is good. It has a creamy mouth feel to it while being flakey to the touch. The perfect amount of moisture holds this together well right before it crumbles and dissolves evenly in your mouth. I would describe it as mild to mild-medium. My wife loves this. It definitely reminds me of Parmesan. This would be great in a salad. My first batch is being enjoyed with a Bordeaux by itself. I should have ordered more but that’s OK. It gives me an excuse to place another order and grab more stuff while I’m there :)

    the only word that comes to mind to describe the Rhododendron honey is savory. it's not going to hit you with supersweet like your typical honey. it's a nice change of pace on yogurt.

    i didn't think i would be able to use up a whole pound of reggiano, but turns out i can. it has been going into pestos, mashed potatoes, toasted on top of crostinis and in mac & cheese. i am also just straight up eating it at my desk for lunch and thinking about making crackers with it tonight. shameful, but delicious. this hunk of parm is a great deal.
